Chocolate Chip Almond Cookies

Ingredients:

  • 1 cup almond meal
  • 1 cup wholemeal self-raising flour
  • 1 cup rolled oats
  • 1/2 cup extra virgin olive oil
  • 1/2 cup brown sugar (packed)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 150g dark chocolate (70% cocoa), coarsely chopped

Method:

  1. Preheat oven to 160 °C . Line two baking tray with baking paper. 
  1. Blend oil and brown sugar in electric mixer until creamy and smooth. Add eggs, vanilla extract and beat well to combine.
  1. In a separate large bowl, combine rolled oats, almond meal, flour, walnuts, seeds & dark chocolate. 
  1. Mix dry ingredients with wet ingredients.
  1. Divide mixture into 20 balls & place onto baking tray & flatten out slightly.
  1. Bake for 20 minutes or until golden brown.
  1. Allow to cool for 5 minutes before transferring to wire racks.
